What are some of the cases you could make to an employer for why switching to durable dishes and utensils is actually in their best interest as well?

Investing in reusables can ultimately reduce an employers' overhead by reducing their out of pocket expenses on disposables, reduces amount of trash picked p each week and, personally, I feel that improving one's actions in one area can have a ripple effect in others.

I surpassed my challenged amount of litter pick up this weekend!  I'm doing much better about just picking non-gross things up when I'm on a walk:-)
