Most of the challenges are not daily  activities so it is difficult to do daily record keeping.

I bought re-usable containers for my son to pack lunches in a small, cloth bag which can be washed. Incredible the level of thought that goes into changing one's own behavior.

I didn't realize the automatic nature of allowing butchers to put my meat/fish into plastic bags before wrapping it. I asked them to forgo the plastic. And I brought my own small paper bags without plastic lining to buy bulk nuts and seeds for my family's trail mix. One's conscious behavior slowly changes!
